This little contraption sits in a wall and forever produces melon slices and pumpkins at an alarmingly slow rate. There is no practical use for this farm on a large scale but comes in handy from time to time when brewing. Sharing is caring so here;
Started with the finished build for a change so you can understand the concept emmediately.
The footprint is very small as you can see. Enough space for 1 watermelon, 1 pumpkin, and the dirt for them to grow onto. The minecarts with hoppers are sitting on there own rails atop a hopper. 2 observers are forever watching the melon stalks and fire a redstone signal each time the stock moves. This will in turn power the adjacent piston to break the melons. 2 redstone dust, 1 ontop of each observer.
This is pretty small. 3 blocks wide and 1 block long, however the item collection system will increase the footprint slightly.
Since this farms output is pathetic there is no issue in using the observer clock to move the items. The comparator will power the sticky piston in the ground when an item enters the bottom dropper. This makes the 2 observers face each other which makes a steady fast redstone pulse strong enough to power both droppers. When the bottom dropper is empty the piston retracts, depowering the clock.
